This week I wanted to show you how to save time throughout the week by preparing some of your ingredients on Sunday evening (or whenever it’s convenient for you). In addition to meals preparation, I like to keep fruits and veggies in the refrigerator at arms reach…washed, chopped and ready to eat. When you purchase prepared vegetables at the store they can be so expensive, so why not do it yourself?
My plan for the week was to have carrots, celery, peppers, cauliflower and grapes ready and waiting for me in the fridge. As you can see from the container above, I did all my washing and chopping at the same time. I then just store this container in my fridge. This definitely promotes healthy eating throughout the week and I live with 2 fruit and veggie lovers so this saves me time at each meal/snack time.
So for this week, I have planned to make Chili, Zuppa Toscana Soup and Crockpot Buffalo Chicken Wraps. Since I was already preparing my snack veggies, I decided to do my chopping for our weeknight meals as well. For Chili I needed green peppers. For Zuppa Toscana, I needed Kale (show in baggies below), plus I am also going to make Kale Chips as a snack. For Buffalo Chicken Wraps I needed julienned carrots and celery.
The Kale needed to be soaked and chopped and then I divided it for my 2 applications. After everything is washed and chopped, I just baggy it up and load it into the fridge. I am now ready for the week ahead! This “tip” not only saves you time throughout the week, but saves money because you won’t be tempted to eat out (which we end up doing more often than not), since your meals are already halfway prepared!! 🙂
