I have been craving Chicken Parmesan for weeks now and just haven’t made it but when I heard about this Bertolli Riserva Balsamic Vinegar and Caramelized Onions I just knew that I had to buy some along with the rest of the ingredients and make some for supper. I was a little nervous using a sauce with balsamic vinegar but I was fooled by what I thought it would taste like. You can add caramelized onions to anything and it’s great but the combo together with the deep, rich color make the first bite (and about 30 after it) amazing!
Making the Chicken Parmesan honestly took me less than 30 minutes from start to finish so make sure to grab the ingredients and add to your week night supper plans too.
Start by cutting your boneless, skinless chicken breast into 2-4 pieces. The piece I picked was extra huge so I cut into 4 pieces. Either put the chicken in a storage bag or you can put a piece of wax paper over the chicken and pound the heck out it.
Start your pasta water. Follow package instructions for how long and what consistency you’d like your pasta cooked. I like mine DONE so I cooked for 8 minutes.
Since making the seasoning takes 2 seconds, heat up some EVOO and a couple tablespoons of butter in a large skillet. The seasoning consisted of flour, salt and pepper. I wasn’t feeling extra daring so if you’d like a crispier crunch you can swap the flour for some Panko Bread Crumbs.
Cook the chicken for about 4 minutes on each side or until the middle reaches 165 degrees. Once that has happened, take the chicken out of the skillet and add in your Bertolli Riserva Balsamic Vinegar and Caramelized Onions Sauce.
Grab that hand held grater and grate some Parmesan Cheese. I grated how much I wanted on each piece. Add the cooked chicken into the Bertolli Riserva Balsamic Vinegar and Caramelized Onions sauce and cover with cheese. Let simmer on low until both the sauce is hot and the cheese is melted. I covered my skillet with a lid to speed up that process because it was smelling amazing and I wanted that food in my belly now.
After you drain your noodles, ladle out your amount on the plate and top with some of the Bertolli Riserva Balsamic Vinegar and Caramelized Onions sauce. Add your chicken and if you like things extra saucy and extra good, add some more Bertolli.
