Maybe you’ve even tried some recipes that have been passed down to you from a previous generation.  And if you’re like me, sometimes a simple meal is what I need after a long day at work. But what if you could just as easily elevate your meal from pretty good to great? I have been craving Chicken Parmesan for weeks now and just haven’t made it but when I heard about this Bertolli Riserva Balsamic Vinegar and Caramelized Onions I just knew that I had to buy some along with the rest of the ingredients and make some for supper.  I was a little nervous using a sauce with balsamic vinegar but I was fooled by what I thought it would taste like.  You can add caramelized onions to anything and it’s great but the combo together with the deep, rich color make the first bite (and about 30 after it) amazing!

Making the Chicken Parmesan honestly took me less than 30 minutes from start to finish so make sure to grab the ingredients and add to your week night supper plans too.

Start by cutting your boneless, skinless chicken breast into 2-4 pieces.  The piece I picked was extra huge so I cut into 4 pieces.  Either put the chicken in a storage bag or you can put a piece of wax paper over the chicken and pound the heck out it.

Start your pasta water.  Follow package instructions for how long and what consistency you’d like your pasta cooked.  I like mine DONE so I cooked for 8 minutes.

Since making the seasoning takes 2 seconds, heat up some EVOO and a couple tablespoons of butter in a large skillet.  The seasoning consisted of flour, salt and pepper. I wasn’t feeling extra daring so if you’d like a crispier crunch you can swap the flour for some Panko Bread Crumbs.

Cook the chicken for about 4 minutes on each side or until the middle reaches 165 degrees. Once that has happened, take the chicken out of the skillet and add in your Bertolli Riserva Balsamic Vinegar and Caramelized Onions Sauce.

Grab that hand held grater and grate some Parmesan Cheese.  I grated how much I wanted on each piece.  Add the cooked chicken into the Bertolli Riserva Balsamic Vinegar and Caramelized Onions sauce and cover with cheese. Let simmer on low until both the sauce is hot and the cheese is melted.  I covered my skillet with a lid to speed up that process because it was smelling amazing and I wanted that food in my belly now.

After you drain your noodles, ladle out your amount on the plate and top with some of the Bertolli Riserva Balsamic Vinegar and Caramelized Onions sauce.  Add your chicken and if you like things extra saucy and extra good, add some more Bertolli.

That fast..dinner is READY..and you will LOVE it!

I was in need of a date-night dinner early so I wanted to try out this Fusilli with Sausage & Mushrooms Pasta and it definitely did NOT disappoint.  Not only was it delicious but it was so easy to make and hardly took any time (even with a hungry spouse or other half waiting to eat).

With just six ingredients in my cart I went to checkout so excited to recreate this recipe for you.  I was even more happy to see that the Carando Sausage was 50% off this week at Kroger so it was only $2.50 for the package.

I started by pan searing the sausage links in a skillet (this can be done in cast iron and probably would have gotten more color).  Once it was done, I took it out of the skillet and let it rest.

Add about 2 Tsp of Olive Oil to the pan and add in your mushrooms of choice. I used Baby Bella.  Let these saute for about 5 min.  In the meantime, cut your sausage links.

Let the sausage in mushrooms simmer for about 15 min.  In the meantime, get that pasta water going and add in your pasta.

Drain your pasta and serve.  I plated mine with the noodles on the bottom and topped with the yummy sausage and mushroom pasta sauce.  I wanted some more carbs with my meal so I had some bread. A multi-grain batard to be exact. (This is a type of bread similar to baguette, but shorter.)

Recipe: Fusilli with Sausage & Mushrooms

Ingredients:

• 1 lb. Carando Italian sausage links
• 1 Tbsp. Bertolli® Classico™ Olive Oil
• 12 ounces Portobello, cremini or white mushrooms, sliced
• 1 jar Bertolli® Riserva Marinara with Parmigiano-Reggiano sauce
• 8 ounces fusilli pasta [or spiral pasta], cooked and drained
• 1/4 cup grated Parmesan cheese

Directions:

1. Brown sausage in 12-inch skillet over medium-high heat. Remove sausage from skillet and cut into 1/2-inch-thick slices; set aside.
2. Heat Olive Oil in same skillet over medium-high heat and cook mushrooms, stirring occasionally, 5 minutes or until tender. Return sausage to skillet. Stir in sauce and simmer covered, stirring occasionally, 15 minutes. Spoon sauce over hot pasta and sprinkle with cheese.

St. Ives Blemish Control

This St. Ives Blemish, I promise you, never leaves my shower caddy unless it’s empty and I need to place a fresh bottle on the rack. I always have an extra bottle in a drawer in my bathroom or I have this itch that tells me I need to buy more. I wanted to save money on this product ONE time.  Just one time I wanted to save a couple of bucks.  That was a big mistake. Not only did my face feel gummy but the smell was just not pleasant.  I enjoy the smell of the St. Ives. St. Ives has ingredients in the product that make me happy to use including 100% Natural Exfoliants, hypoallergenic (very important for my super sensitive skin) and paraben free.

I don’t know who decided to make these wipes but they are a genius and should be hugged.  I was turned on to Pond’s about a year ago when they were on sale at Kroger and there was a coupon. I never wanted to spend the full price amount at the store so with the sale and coupon I decided to give it a try.  Um..these towelettes sucked the makeup right off my skin and left it feeling sooooo soft.  Coupon or not, these go into my cart about once a month.  I really like how sensitive they are for my skin and how the smell is not overpowering. And then Vitamin E is added (promotes healthy looking skin and soothes) and I just look 21 all over again (humor me here)!!  I can officially use my white sheets again and be confident I’m not going to wake up with makeup stains on my pillow case. Instead, I’ll have a clean face free of blemishes.
