Hi! So, I used to work at Olive garden… so I’m quite familiar with Zuppa Toscona and Pasta e Fajoili. 🙂 I found a recipe for the zuppa that is pretty darn close: http://jamiecooksitup.net/2011/03/zuppa-toscana/
And I have a recipe for a dead-ringer pasta e fajoili soup, but I can’t seem to find it in my pintrest. 🙁 But here’s how to do it:
Ingredients
-1 c. ditalini pasta, uncooked
-1lb ground beef
-1 T. extra virgin olive oil, divided
-1 c. matchstick cut carrots
-1 c. diced celery (about 3 stalks)
-3/4 c. diced yellow onion
-1 large clove garlic, minced
-3 (8oz) cans tomato sauce
-3 c. beef broth
-1 c. water
-1 (15 oz) can diced tomatoes, undrained
-1 T. granulated sugar
-1.5 tsp dried basil
-1 tsp. oregano
-3/4 tsp. dried thyme
-1/2 tsp. marjoram
-1 can each: northern, dark red kidney
Directions: (
1. Cook up ground beef in cooking pot, set aside.
2. In same pot, saute 1 T. olive oil with carrots, celery, and onion until tender. Add garlic and saute one minute longer.
3. Reduce heat and add rest of the ingredients to the pot, minus the pasta (cook it separately until al dente and add at the end). Cook until beans and vegetables are soft.
Generally, I add a little more broth or a bit of water to the leftovers because it winds up being pretty thick.
Oh, and it might be cheaper to just go for lunch and get soup… I can’t remember the prices, but the dinner soup and salad price was kind of stiff, perhaps even with a coupon! 🙂

Holly – I never order anything but the soup and salad there and am always able to use coupons. They do consider that an “entree”. 🙂
