Here’s a quick recipe that I wanted to share with you today. If you are following the Weight Watchers program with me, this may just help you get through the rest of your week!
Kale is one of those things that I purchase frequently because I have a strange child (strange in a good way of course 😉 ) that would live on kale and spinach if I let her. I personally don’t share her love of greens, so I try to find yummy recipes to incorporate them in! Kale chips are a great way to get these nutrient packed veges into your people and they taste great! Even better, this whole recipe is only 2 Weight Watchers PointsPlus points!
Ingredients:
(1) bunch of kale, washed and dried
(2) teaspoons extra virgin olive oil
(1/2) teaspoon sea salt
Instructions:
Remove the ribs from the kale and tear into bite size pieces. Spray a baking sheet with non-stick spray. Place kale pieces on baking sheet and spray them with more non-stick spray. Then, add olive oil and salt and toss. Bake at 325 degrees for about 15-20 minutes, turning kale halfway through. Serve immediately or store in an airtight bag or container. Makes 4 servings.
I only got to eat about 4 of these “chips” before my daughter confiscated and inhaled them. 🙂
